Recipe: Carob almonds for Easter

This week we would like to present you a suggestion of a healthy sweet treat you can make for Easter. πŸ™‚

This recipe is really simple but sooo tasty! I had to control myself not to eat everything right after I made it hehe πŸ™‚

Like all our recipes, it is refined sugar-free, healthy and guilt-free!

Preparation time: Β 10min

Ingredients
– 100g extra-virgin coconut oil (cold pressed)
– 50g unprocessed raw honey* (or maple syrup if you are vegan)
– 15g carob powder
– 100g whole almonds

Preparation
1. Heat a little bit of water and place a bowl inside with the coconut oil until this is melted.
2. Remove the bowl from the heat and add the honey and carob. Mix well.
3. Add the almonds to the mixture and mix well.
4. Place the mixture in a rectangular glass box and put it in the fridge for about 1h to solidify.
5. Cut it in little squared/rectangular pieces. Place it again in the fridge until solid or until you want to serve it.

* Pay attention to the honey you buy as not all honeys are necessarily good. In supermarkets we find many that were heated up (or pasteurised) and some that are even mixed with sugar. I recommend you buy a good quality honey that is organic and unprocessed (read the label). Also, check the ingredient list just to be sure there is no added sugar or syrup. This is really important, otherwise the honey that you will use can end up being as detrimental as consuming sugar.
