Recipe: healthy hazelnut chocolate spread
This is one of kids’ most favorite treats. As you probably have already heard, the original version is very unhealthy. It contains unhealthy fats and is loaded with sugars, among other unhealthy ingredients. But you can make your own healthy version of a hazelnut chocolate spread! And with this one you will not feel bad about giving it to your kid, since it only contains super healthy ingredients. In addition, it is a raw and vegan recipe.
Hopefully, you will like this one so much that you will forget about the unhealthy one :).
Preparation time: 20-30min
Ingredients
– 200g hazelnuts
– 50g cashews
– 50g cacao paste
– 1 tablespoon coconut oil
– 150ml water
– 50-100g dates (depending how sweet you want it to be)
– 1/8 teaspoon vanilla powder
– A pinch of salt
Preparation
1. Soak the hazelnuts in water for approximately 8 hours and the cashews for 4 hours.
2. Add the hazelnuts, cashews, dates, coconut oil, water, salt and vanilla to the blender and blend initially on low speed, and then increase the speed a little bit, until a creamy mixture is formed. You can stop the machine when you feel it’s getting too warm and then turn it on again after few minutes.
3. Meanwhile, melt the cacao paste. Put it in a pot on the lowest temperature of your stove or in a double boiler. Don’t forget that it is important to keep the temperature as low as possible (ideally, under 40°C) in order to conserve the nutrients of the cacao, as I explained here.
4. Add the melted cacao paste to the mixture in the blender. Mix everything well.
5. Transfer the mixture to a jar and conserve it in the fridge for about 1 week.
